I have two dining rules.

1. If offered, always order pork belly.
2. If offered, always order confit.

I don't think I have yet been forced to decide between the two.

You've heard that at Per Se you can do individual dishes at the bar, right? Not the full tasting menu experience, obviously, but the gal that cooked The French Laundry cookbook has done a few a la carte dishes with friends and thought it was a great way to get a taste of Keller for less $$. You should check it out next time you're there. :)
